If you’re heading off on the boat over the holidays, these are an easy to transport alternative to mince pies and will keep well for at least a week in a biscuit tin.  They could also be easily made on board if you’ve got an oven! 

  • ½ cup canola or vegetable oil
  • ½ cup sugar
  • 1 egg
  • ¾ cup fruit mince
  • 1 ¼ cup plain flour
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla
  • ¼ cup chopped walnuts

Mix all ingredients and drop dough by tablespoons onto greased or lined baking sheet. 

Bake at 180oC for 10 minutes.  Cool on sheet briefly before transferring to cooling rack.

Makes about 2 dozen.
